Apple Crisp Anyone?

Apple Crisp is a very nice dessert to have with your dinner.It’s just the husband and I for dinner and dessert tonight, so I need to be creative when cooking at times. I love cooking and baking, but let’s be honest, leftovers are only cute once, maybe twice after the initial bite. Large portions of dessert are challenging because, well, if sweets are left in this house, they will be consumed by me; and my waistline would start to resent that.

I’ve been scouring the net for single serving portions of desserts.  I’ve stumbled on some interesting ideas. Once, I found a single serving cake in a mug, but it turned out to be a complete failure. It was absolutely disgusting. I guess cake is designed to be made in all of its full serving glory.

Last week, while planning dinner, I decided that I needed a recipe to use up the last two granny smith apples that I had in the fridge. My husband loves apple crisp. In fact it’s his signature dessert and highly requested when we have folks over. But since it was just the two of us, I decided to try a recipe I found here and test it out. I made a few modifications, but in essence kept the same script. Here are the ingredients and what I did.

Ingredients for 2 Servings:

– 2 apples, peeled and thinly sliced  – I used Granny Smith

– 4 tablespoons brown sugar – not packed, loose tablespoons

– 4 tablespoons quick-cooking oats

– 2 tablespoons flour

– 1 1/2 teaspoons cinnamon

– 1 teaspoon of lemon juice

– 2 tablespoons butter

Cooking Directions:

1. Peel apples and slice into cubes. Put in separate bowl and cover with 1 tsp of lemon juice and sprinkle ½ tsp of cinnamon.

2. Make sure butter is at room temp and soft, not melted. Combine with oats, brown sugar cinnamon and flour.

3. Transfer apples to ramekins and cover with oats mixture. Be sure to cover completely with mixture.

4. Bake at 375°F for about 15-20 minutes.

5. Turn broiler on for about 5 minutes until mixture is bubbly (OPTIONAL).

The baking time will depend on your oven. So be sure to watch it. Unfortunately, I didn’t take a proper picture, but trust me it was delicious! Honestly, the end result was delightful. The dessert was the perfect size for just the two of us and I’m sure this will definitely be a go-to dessert in the future!

A return to Oatmeal

This product has officially made me fall in love with oatmeal.I have never been a big fan of oatmeal. I’m a foodie that likes food to look, well um er, edible.  Something about oatmeal and the consistency just turned me off from the start. It was too mushy looking. As a child, it was a part of our breakfast menu and I wasn’t able to finish it. I guess you could blame that on the texture and the bland taste. Whatever it was, it was not my favourite breakfast item.

After we got married, I found out that my husband loves oatmeal. So when grocery shopping I bought some for him. But I’d never eat it! On days when we were out together, I’d be starving by 11am and he’d be fine. The difference? As he says, the oatmeal “sticks” to you. But I couldn’t bring myself to eat it. I tried the store brands that had TONS of sugar in it. It was ok, but the sugar just kind of messed with my head. I gave up on it – again.

While engaging in my obsession hobby of reading blogs, low and behold I stumbled upon a product called Mad Hectic Oatmeal.

I was skeptical at first, because let’s be honest, it’s a bit more pricey than your regular brand in the grocery store. But then I did a rundown of the nutrition content and I was floored! It contains organic oats, whey protein and flax! It’s some really good stuff in there. So I broke down and ordered some. It was the best decision ever. They have tons of flavours. My favourite is the French Chocolate and my husband loves the strawberry pecan. Both are super tasty. After trying this brand, I officially LOVE oatmeal. And the mega amount of protein in one serving really keeps me feeling full throughout the morning. The taste is delicious and the look of it doesn’t bother me! Imagine that!

Balsamic Chicken Strip with Tomato

This recipe for Balsamic Chicken Strip with tomato is a very good dish for dinner.We love chicken a lot in our household. I’m always on the lookout for new ways and flavours to use with chicken. That’s the great thing about chicken; it holds up to a variety of seasoning, sauces and marinades. This is a quick dish and even though I’ve made this dish before, it has been a while so I thought it would be worth explaining the process. I was cleaning out the pantry and I had a little bit of balsamic vinegar left. I need to get more, but wanted to use it up first. And voila dinner was ready.

At times, for me, balsamic vinegar can have a slight bite to it. I tasted the sauce while I was cooking, and it was a bit too tangy for me. I added a pinch of dark brown sugar to the pan. That added bit of sweetness really balanced the sauce. It’s an optional step depending on your preference.

I served this over regular white rice with a side of chopped spinach. It was a delicious, quick and easy meal. Let me know if you decide to try it!

Ingredients for 2 Servings:

– 2 chicken breasts, sliced into strips

– 1 tsp Poultry seasoning

– Black pepper to taste

– 2 tbsp olive oil

– 1/2 medium yellow onion, sliced thinly

– 15oz can diced tomatoes

– 1/4 cup balsamic vinegar

– 1/4 chicken stock

– Pinch of dark brown sugar (optional)

Cooking Directions:

  1. Heat heavy bottom pan over medium-high heat. Add oil and heat.
  2. Add sliced onion and toss in pan. Cook until browned and soft; about 8-10 minutes
  3. Season chicken strips with black pepper and poultry seasoning.
  4. Add chicken to pan with onions; stir and cook until juices run clear; about 10-12 minutes depending on the size of your strips.
  5. Add can of tomatoes, balsamic vinegar and chicken stock and stir into the chicken and onions.
  6. Let cook until mixture slow boils and bubbles. Then reduce heat to low and allow sauce to reduce; about 10 minutes.
  7. Serve immediately over rice and Enjoy!
